Backcountry Fuel! Tasty Snack Ideas that Pack a Punch

Have you ever noticed how great food tastes when out in the backcountry? It might be the view, the experience, the company or simply the fact that you have been walking uphill for countless hours but when it comes to snacks, they are just that much better out there. We all have our favorites of course when it comes to putting a lunch together but sometimes it’s good to push the envelope and venture to different flavours. I was looking for ideas that would be easy, fast and simple to prepare but light and high in energy to carry.

In the past, I have been a big fan of Organic Energy bars but being environmentally and financially conscious, those seems like a bit of a luxury to me. So I tried a few things until I discovered the “Backcountry Nuggets!” They take 5 minutes of preparation and 12 minutes of baking for about 12 pieces of goodness, I think it’s worth the time!

Nibs Nuggets:

1 cup of Almond Butter (or any type of nut butter)

2/3 cup of shredded coconut

1-1/2 tablespoon of coconut oil (or other type of oil)

½ cup of Karob chips or chocolate chips

½ cup of cacao nibs

1/3 cup of almond mill (or any type of flour)

2 tablespoon of cacao powder

¼ cup of whole almond

¼ cup of pumpkin seeds

¼ cup of dry cranberries (figs, dates, raisin can also be great substitutes)

½ teaspoon of cinnamon

1 egg

½ cup of raw honey

 

Mix ingredients all together and make tablespoon size nuggets. Place on a cookie pan in a pre-heated oven at 350 degrees. Leave for 12 minutes or until golden on top and let cool down before storing!

Another really quick idea if you don’t have time to bake is to just peel a banana, cut it in half lengthwise and fill it with Almond butter. It’s rich, filling and high in great energy. Just think about it, it may just be the one item left in your bag when comes time to climb for yet another lap so it needs to be a good one!
